Easy-peasy family pasta recipe (baby-friendly, too)

A quick and super healthy pasta dish is a midweek staple and this recipe is perfect for feeding the entire family. As a busy mum, I know how important it is to have a variety of quick and easy recipes on hand that your entire family will love.

The simple sugar snap peas, cherry tomatoes, and goat’s cheese sauce is so versatile and tasty that you can mix this dish with any veggies your little one prefers, and it makes an easy nursery or school lunch option, too.

All of the ingredients in this family pasta recipe are inexpensive and easily available. I sometimes swap the sugar snap peas with fresh broad beans, when they are in season. You can use any soft, mild Welsh or French goat’s cheese but I would avoid strong goat’s cheeses, as they will overpower the flavors of the ingredients. Add salt and pepper at the end if you want to make this dish baby-friendly.

Boil the sugar snap peas in a large saucepan of lightly salted boiling water, drain and rinse in cold water. Put the cherry tomatoes, olive oil, garlic, basil, and some salt and pepper in a large bowl and mix well. Then stir in the sugar snap peas and leave to marinate while you cook the linguine.

Bring a large pan of lightly salted water to the boil and cook the linguine. Add the tomato and sugar snap peas mixture, together with the goat’s cheese in a frying pan and cook for 2-3 minutes before adding the pasta. Mix well and serve immediately, sprinkling some freshly ground black pepper, a drizzle of olive oil and a few basil leaves on each portion.

I put aside a small portion of pasta for my 9-months little boy, before adding salt and pepper. I then used our trusted Itsy Blitz to lightly blend the pasta before serve it to Noah. If you are doing a bay led weaning approach, you can chop the linguine into tiny pieces.
