It doesn’t take much to have the Londoners thinking about picnics. A hint of blue sky and a ray of sunshine and we’re all packing our picnic baskets.
Ahead of Father’s Day, I decided to organize a fun and memorable family reunion to celebrate, spend some quality time with my dear ones over some good food and bubbles and take full advantage of the glorious weather. Picnics are one of my favourite Summer events. They’re an opportunity for me, my family and friends to get together without spending too much money.
For as far back as I can remember I always loved mushrooms. I was blessed to be born in a country with beautiful landscapes, soaring mountains to climb and lots of forests to explore and I loved spending time in nature. I remember going in the mountains with my father – I must have been less than 8 years old – mushroom hunting. Although I’ve never learned the science of mushroom hunting, it was a fun, seasonal activity for my family.
And because we love mushrooms, it was only natural to pack them in my picnic basket. Mushrooms are the perfect choice for picnics or barbecues – they’re tasty, easy to carry around, can be used in lots of different ways, can be eaten with or without cutlery – and above all, they’re affordable.
If you’re looking for a light and healthy meal al fresco then grilled mushrooms topped with baby broccoli and parmesan cheese are just the ticket. Below you’ll find a quick and easy recipe that will hopefully inspire you to include mushrooms in your future summer parties, picnics and barbecues. Happy picnic-ing!
